There’s nothing nicer on a hot summer’s day in the capital than sipping cocktails on an open-air roof terrace, gazing at London’s impressive skyline. Cuervo’s Cantina, a new Mexican pop up bar at Skylounge – at the top of the DoubleTree hotel in Tower Hill – is definitely one of the best new pop-up hotspots to check out.

It may have been raining when I paid a visit at its launch, but even the grey skies couldn’t dampen the upbeat mood of ‘Mexico’. Cocktails were the order of the day and we ordered Mexican Mules and tangy frozen Margaritas (divine!), whilst we listed to the traditionally-dressed Mexican quartet serenade us with obligatoryGuantanamera!’

The food was delicious and we were treated to taquitos, nachos with chicken, sour cream, guacamole and jalapeño peppers, bean burritos, and fajitas with pulled pork and pineapple (trust me it works).

The décor was brilliant – you could almost imagine you were in a traditional bar in Central America, if it wasn’t for the steely surroundings of London’s commercial centre. The view was fantastic; you could see The Gherkin, The Shard and the ‘Walkie-Talkie’ building (the one that melts cars), as well as Tower Bridge and The Tower Of London – a real mix of old and new London.

The pop-up runs until 10pm everyday, throughout summer. If you haven’t organised a holiday just yet – this is the perfect compromise to transport you to exotic climes – even if it’s just for the the time it takes you to polish off a Margarita.
